Two of Australia’s iconic golf courses are just a short drive from the centre of the city, including the wild and challenging NSW Golf Club links course overlooking Botany Bay at La Perouse, where prevailing sea breezes ensure every round is different from the last. The par 3, 6th hole, played over the sea, is world-renowned. Pretty Beach House is a private getaway overlooking the waterways of the Bouddi Peninsula, a short but spectacular seaplane flight from Sydney. Surrounded by eucalypt forest, each of its four pavilions have wonderful views and private plunge pools. But the real reason to visit is the chance to chat with Aboriginal elders during the Welcome to Country smoking ceremony, or on a guided bushwalk to one of hundreds of cultural sites in the neighbouring national park.
Experience an outback sunset safari with wild kangaroos, wombats and echidnas in the majesty of the Greater Blue Mountains World Heritage area, at the ultra-luxe Emirates One&Only Wolgan Valley hotel. Take a chopper transfer to the 7,000 acres of privately owned reserve, only a stone’s throw from the edge of the world’s second-largest canyon, and explore the surrounds on horseback, by mountain bike or 4WD.
Sydney locals take encounters with whales for granted – it’s not uncommon to see them on the daily commute across the harbour – but Australia’s most famous whale, Migaloo, is unique. This white humpback is often spotted on his annual migration along the east coast. Private whale watching tours are available from May through to November with Oz Whale Watching.
Spend the day with the chief winemaker at Audrey Wilkinson vineyard, not only one of the Hunter Valley’s oldest and most prestigious wineries but also the cellar with the best view. Taste wine from the barrel, enjoy a vertical tasting at the onsite wine museum, or heli-transfer to one of the region’s best restaurants for lunch with the winemaker. Don’t leave without sampling the rosy vin de vie muscat – it’s been their signature drop for more than 100 years.
